Nut-Free “Cheesy” Kale Chips❤
Most of the “cheesy” recipes include cashews or other nuts, which I am super allergic to. So, I was determined to create a “cheesy” nut free option and here it is!
Using your #Vitamix blend until smooth:
3/4 cup sunflower seed butter
1/2 green pepper, diced
2 tbsp lemon juice
1/4 cup Nutrional Yeast
If you prefer your kale chips a tad sweeter, add a drizzle of maple syrup
Wash and dry one bunch kale. It’s important you dry the kale so the yummy sauce sticks to it. Tear the kale in to strips, squares or whatever you like. Some people remove the stem because they don’t dry out as quickly. I leave the stems on- I don’t mind the juicy spots :)
Toss kale in a large bowl. Using your hands cover all the kale in the “cheesy” sauce. You want every bite to be yummy! Great time time to get your kids involved!
Spread kale out onto a parchment lined baking sheet. Sprinkle with a little extra nutritional yeast & sunflower seeds, if you like! Place in oven at 225 Check every 25 min, tossing with tongs to make sure all sides dry out evenly.
Kale chips are done when they are crispy & dark green in colour. Time will depend on your oven. 55 min seems to be my go to! If they seem to be turning too brown before that, remove. Burnt kale does taste good, nor does it smell pretty.
Allow to cool on baking sheet. Make sure they are completely cooled before you store them in an air tight container.
Mine don’t often make it to the glass jar- they are just too yummy!!
