I have been trying to find a nut free alternative to Almond flour for ages and I have finally figured it out!! Using raw organic sunflower seeds and your vitamix (or food processor) you can make fresh sunflower seed flour in a few short minutes!

I am all about starting my day off with a smoothie!
Options are endless but when I find a good one, I’m known to stick to it! This blueberry kale smoothie is definitely one of those smoothies that make it in to my morning routine at least a few times a week.
You will need:
1 cup coconut milk (or milk of your choice)
1 organic banana
3 stems of kale, washed & stems removed
1 organic apple, core removed & diced
1 cup organic frozen blueberries
4-6 ice cubes depending on how icey you like your smoothie
Put all items in your #vitamix (or whatever blender you have). Turn on variable 1, turn up to 10 then high. You might need to use your tamper to help things move around. About 1 minute and your smoothie is ready to go! You can add a little sweetener of your choice if you’d like, but I quite like it as is.
Smoothies are a great way to hide greens from your kids or those who are not so keen on them. Options are endless! Have fun with them, experiment- you never know what you might come up with!

Today I have had to remind myself that life has a funny way of working itself out. Im just waiting for it to do just that.
We have shitty days that remind us how fabulous our good days are! If all days were good days would we appreciate them as much??
I’ve challenged myself: if I find I’m having a crap day, blast some fabulous “dance your heart” out music, sing even though you don’t want to! & Take ridiculously goofy pictures of yourself! By the time you have done those 3 simple things, you should find your smile :)

Make snacking easy by preparing healthy veggie jars ahead of time!
When I am really hungry sometimes something as easy as washing and chopping up veggies seems like too much work. To help cut down on munching on the processed stuff, I’ve taken matters in to my own hands. By setting aside as little as 20 minutes at the beginning of the week, when hunger calls, I have fresh veggies ready to go!
I love using mason jars for this. There is plenty of room for lots of veggies and they look pretty in the fridge! But use whatever you have.
These also make great ready to go snacks for kids.

It is important to make time for a healthy start to your day. But, we dont always have time- lucky for us, smoothies are quick & delicious! This blueberry oatmeal smoothie is loaded with nutrients. unlike many smoothies this one keeps you full till lunch!
Place the following in your #Vitamix :
1 cup ice
1/2 cup coconut milk
1 organic banana
1/2 cup rolled oats
1/2 cup frozen blueberries
(Optional-1 teaspoon maple syrup)
Slowly increase to variable 10, then High. Blend till smooth- about 1 minute.
So yummy, your whole family will love it!

Nut-Free “Cheesy” Kale Chips❤
Most of the “cheesy” recipes include cashews or other nuts, which I am super allergic to. So, I was determined to create a “cheesy” nut free option and here it is!
Using your #Vitamix blend until smooth:
3/4 cup sunflower seed butter
1/2 green pepper, diced
2 tbsp lemon juice
1/4 cup Nutrional Yeast
If you prefer your kale chips a tad sweeter, add a drizzle of maple syrup
Wash and dry one bunch kale. It’s important you dry the kale so the yummy sauce sticks to it. Tear the kale in to strips, squares or whatever you like. Some people remove the stem because they don’t dry out as quickly. I leave the stems on- I don’t mind the juicy spots :)
Toss kale in a large bowl. Using your hands cover all the kale in the “cheesy” sauce. You want every bite to be yummy! Great time time to get your kids involved!
Spread kale out onto a parchment lined baking sheet. Sprinkle with a little extra nutritional yeast & sunflower seeds, if you like! Place in oven at 225 Check every 25 min, tossing with tongs to make sure all sides dry out evenly.
Kale chips are done when they are crispy & dark green in colour. Time will depend on your oven. 55 min seems to be my go to! If they seem to be turning too brown before that, remove. Burnt kale does taste good, nor does it smell pretty.
Allow to cool on baking sheet. Make sure they are completely cooled before you store them in an air tight container.
Mine don’t often make it to the glass jar- they are just too yummy!!
